Vegetable Salad with Peanut Sauce – explained

Indonesian Vegetable Salad with Peanut Dressing (Gado–Gado) This popular Indonesian salad lends itself to creativity; nearly any combination of raw and cooked vegetables, along with rice or thin noodles, can be used. An addictive, aromatic peanut sauce ties it all together.
Also known as lotek (Sundanese and Javanese), is an Indonesian salad of slightly boiled, blanched or steamed vegetables and hard-boiled eggs, fried tofu and tempeh, and lontong (rice cake wrapped in a banana leaf), served with a peanut sauce dressing. For those following vegan diet, you can dropped the boiled egg but leave the tofu and tempeh (traditional soy product originating from Indonesia) in your gado gado.
